Baised Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Make a hollow in the middle of the pastry and knead it to ensure even thickness.

  2. Fill the pie with your desired filling.

  3. Roll out the remaining pastry for the top, moisten the edges with a little egg, and place it on the pie.

  4. Press down securely and pinch the edges with a pastry pincher.

  5. Create a small hole in the center and decorate with pastry ornaments.

  6. Brush the top with egg and bake in a well-heated oven at 400°F (200°C).

  7. Once baked, remove from the oven and pour in a little good gravy, which will set when cold.

  8. If using a mold, butter it and line it with firm pastry before filling and covering as described.
