Oyster Loaves

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the buns

  1. Cut a piece the size of a crown from the top of each bun and scoop out most of the crumb.

Make the filling

  1. Combine the crumb, butter, and oysters in a frying pan.

  2. Fry the mixture for 5 minutes.

  3. Add cream and seasoning to the pan.

Fill and bake

  1. Fill the loaves with 4 oysters each.

  2. Replace the crust pieces on top of the loaves.

  3. Butter the outsides of the loaves.

  4. Place the loaves in a 400°F (200°C) oven until crisp.

  5. Serve hot or cold.

What each ingredient does

Halfpenny buns
Form the hollow vessel that holds the filling and crisps in the oven.
Oysters
Provide the main filling, adding briny flavour and a tender texture when gently fried.
Butter
Adds richness and fat, helping the filling and outside of the buns brown.
Cream
Adds moisture and richness, turning the oyster mixture into a creamier filling.

The step that matters

Frying the oyster mixture. Oysters overcook quickly and turn rubbery when heated too long. Frying only until the mixture is warmed and the oysters just firm keeps them tender before they bake in the bun.
