Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Lobster Pie
Ingredients
Directions
The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 300°F (150°C).
Cover the inside of a pie dish with the pie crust.
Take the flesh from the tails of the lobsters and cut it into lengths.
Pick the meat out of the claws and pound it in a mortar.
Assemble and bake
Add pepper, essence of anchovy, lemon juice, grated bread, egg yolks, and melted butter to the pounded meat.
Put the lobster mixture into the pie dish and spread the forcemeat on top.
Cover with a top crust and bake in the oven until golden.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
