Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the main body and flavour of the sauce as it softens into a pulp.
Butter
Adds fat for richness and a smooth mouthfeel.
Flour
Thickens the sauce as its starch swells in the hot liquid.
Milk
Provides the liquid base and adds creaminess.
Sugar
Adds sweetness that balances the savoury celery.

The step that matters

Stew slowly until pulpy but not brown. Gentle heat softens the celery's cell walls so it breaks down into a smooth pulp. Higher heat can scorch the butter and sugar, causing browning and bitter flavours that carry into the sauce.

Swap the white pepper

How well each one fits the dish's main ingredients (celery, butter, sugar, flour, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. White pepperthe original

Fit is the average pairing score against celery, butter, sugar, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
