Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornflour
Thickens the lemon and water liquid into a set, spoonable custard.
Eggs
Whites beaten until stiff add a light, airy topping.
Oranges
Provide the fruit base and their juice flavour under the custard.

The step that matters

Stir for 10 minutes. Cornflour must be kept moving while it boils, or it can clump and scorch on the base of the pan. Continued boiling fully gelatinises the starch so the mixture thickens evenly and holds its set when cooled.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, orange, egg, vanilla):

  1. Figfits better
  2. Blueberryfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, orange, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
