What each ingredient does

Oysters
Provide the main flavor and the soft, moist filling that the cakes are built around.
Cracker crumbs
Bind the oysters into cakes and form a crisp, browned coating when fried.
Butter
Conducts heat and browns the coating, adding richness and a golden color.
Oyster liquor
Adds moisture and concentrated oyster flavor to the crumb mixture.

The step that matters

Frying the cakes in butter until golden brown. Butter browns quickly and can burn before the coating is evenly crisp, so moderate heat and attention are needed. The cakes must be cooked through while the crumb coating sets into a crisp shell.
