Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Roll the crackers into coarse crumbs.

  2. Drain the liquid from the oysters.

  3. Butter a deep dish or pan.

Assemble

  1. Cover the bottom with a layer of cracker crumbs.

  2. Add a layer of oysters, sprinkle with salt, pepper, and bits of butter.

  3. Repeat layers until the dish is filled, finishing with a layer of cracker crumbs on top.

  4. Pour the reserved oyster liquid and the milk over the layers.

Bake

  1. Bake at 350°F (175°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, briny filling that cooks in the custard.
Crackers
Form the crumb layers that soak up liquid and give the dish body and structure.
Milk
Adds moisture and creaminess that sets gently into a custard as it bakes.
Butter
Adds richness and helps the top brown in the oven.

The step that matters

Pour the oyster liquid and milk over the layers. The liquid must soak evenly through the cracker crumbs so the dish becomes moist rather than dry or patchy. Oysters release liquor as they cook, so keeping the reserved liquid matters for flavor and texture.
