Escalloped Potatoes

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the potatoes in their jackets until tender, then peel and slice them.

  2. In a basin, layer the sliced potatoes, sprinkling each layer with pepper, coarse sea salt, flour, and a small piece of butter.

  3. Continue layering until the basin is filled.

  4. Pour in milk until the basin is half full.

  5. Bake for 30 minutes at 350°F (175°C).
