Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Mix the corn starch with a little cream until smooth.

Make the filling

  1. Combine the corn starch mixture with the remaining cream, adding sugar and vanilla to taste.

  2. Beat the egg whites until stiff peaks form and fold them into the cream mixture.

Bake and serve

  1. Pour the mixture into a pie crust and bake slowly until set.

  2. Serve very cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides the rich base and fat that give the filling its smooth, creamy body.
Corn starch
Thickens the cream as it heats, helping the filling set into a sliceable texture.
Egg whites
Whipped to stiff peaks, they add lightness and help the filling set with air and structure.

The step that matters

Bake slowly until set. Baking at a low temperature gently sets the egg whites and starch without overcooking the cream, which can otherwise curdle, weep or crack the filling.
