The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet cream
Provides richness and fat, giving the filling a smooth, creamy body.
Egg yolks
Thicken the custard as they set with heat, giving structure and richness.
Corn starch
Thickens the liquid when heated, giving the filling body without graininess.
Blanched and chopped almonds
Add texture and a nutty flavor that contrasts with the smooth custard.

The step that matters

Cook until thickened. Egg yolks and corn starch set as they heat, but overheating can curdle the yolks and make the filling grainy. Cook gently and remove from heat once thick.

Swap the almond

How well each one fits the dish's main ingredients (cream, egg, corn, milk, sugar, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Beansfits less well

Fit is the average pairing score against cream, egg, corn, milk, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
