Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, stir the beaten yolks of the eggs into the ground ham.

  3. Add the milk, flour, salt, and pepper, and mix well.

  4. Gently fold in the beaten egg whites.

Bake

  1. Grease a casserole or baking dish with butter.

  2. Place the casserole in a pan of water and bake for about 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground ham
Provides the main savory flavor and the bulk of the dish.
Eggs
Yolks bind the mixture and whites, folded in, lighten it and help it rise.
Milk
Adds moisture and creates a custard-like texture when baked.
Flour
Thickens the mixture and gives it structure so it holds its shape.
Butter
Adds richness and flavor, and greasing the dish keeps it from sticking.

The step that matters

Gently fold in the beaten egg whites. Whites hold air that makes the soufflé rise. Stirring or deflating them vigorously knocks out that air, so the result bakes up flat and dense.
