Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main ingredient, browning in the hot butter and giving a rich, briny flavour.
Butter
Browns in the hot pan to add nutty flavour and forms the base of the sauce.
Flour
Thickens the melted butter into a smooth sauce that coats the oysters.

The step that matters

Heating the butter until it smokes. Butter that is hot enough to brown quickly sears the oyster surfaces before they overcook. If the pan is not hot enough, the oysters release liquid and steam instead of browning.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, butter, flour, sauce, pepper):

  1. Capersfits about as well
  2. Parsleythe original
  3. Nutmegfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against oyster, butter, flour, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
