What each ingredient does

Bananas
Their pulp provides the main flavor and body of the whip.
Heavy cream
Whipped into the mixture, it gives the dessert its light, airy texture.
Sugar
Adds sweetness and helps balance the tartness of the lemon juice.
Lemon juice
Adds acidity that brightens the flavor and helps keep the banana pulp fresh-tasting.

The step that matters

Beat the banana mixture into the whipped cream gradually. Adding the pulp slowly and folding or beating it in steadily keeps the cream from deflating or separating, so the whip stays light and evenly combined.
