Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiled potatoes
Provide starch and body, giving the souffle a soft, light and moist crumb.
Butter
Adds richness and fat, contributing tenderness and a smooth texture to the mixture.
Eggs
Bind the mixture and set on baking, giving the souffle its structure.
Sugar
Sweetens the mixture and helps the eggs blend smoothly into the base.
Sweet almonds
Add fat and nutty flavour, along with moisture and a tender texture.

The step that matters

Beating the egg yolks with sugar and potatoes. Egg yolks must be beaten well so they blend evenly into the base. Uneven mixing leaves streaks and an uneven, dense texture after baking.

Swap the potato

How well each one fits the dish's main ingredients (lemon, sugar, almond, butter, egg):
