Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the baked potatoes in half lengthwise.

  2. Remove the insides and mash them.

  3. Season the mashed potatoes with salt and pepper.

  4. Fold in the stiffly beaten egg white if desired.

Stuff and brown

  1. Put the mixture back into the potato half-shells, leaving the surface rough.

  2. Return to a hot oven at 400°F (200°C) and brown the rough edges.

What each ingredient does

Baked potatoes
Provide the fluffy starchy base that becomes the filling and shell.
Egg white
Adds lightness and helps the stuffing hold a airy, fluffy texture when whipped.

The step that matters

Browning the rough edges in the oven. The raised, rough surface needs enough oven heat to brown properly. Starch and proteins on the surface undergo browning reactions that add flavor and color, so the potatoes should be hot and watched closely.

Swap the potato

How well each one fits the dish's main ingredients (egg, pepper):

  1. Capsicumfits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
