What each ingredient does

Sweet potatoes
Form the main body of the dish, becoming soft and tender when baked.
Brown sugar
Sweetens the glaze and caramelises on the surface as it bakes.
Butter
Adds richness and helps the glaze coat the potatoes with a smooth, glossy finish.

The step that matters

Basting with the syrup at intervals. Sugar syrup can scorch or burn on the exposed surface in a hot oven. Spooning the syrup back over the potatoes keeps them moist and builds an even, glossy glaze.
