Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Prepare the dough for baking powder biscuit.

  2. Roll out the dough to ½ inch thick and cut into 4-inch squares.

  3. Place a pared and cored half of a tart apple on each square.

  4. Fold the corners of the dough over the apple and pinch the seams to seal.

  5. Place the dumplings on a buttered baking pan.

Bake and serve

  1. Bake at 400°F (200°C) or steam for 1 hour.

  2. Serve with hard sauce, cream, and sugar.

What each ingredient does

Dough for baking powder biscuit
Forms a tender, flaky wrapper that encloses the apple and holds its shape while baking.
Tart apples
Provide the filling, becoming soft and sweet-tart as they cook inside the dough.
Butter
Greases the pan so the dumplings do not stick and adds richness to the browned base.
Cream
Adds richness and moisture when served alongside the dumplings.
Sugar
Adds sweetness to the finished dumplings and balances the tartness of the apples.

The step that matters

Pinch the seams to seal. If the dough corners are not sealed firmly, syrup and juices escape during baking, leaving the filling dry and the wrapper uneven.
