Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg yolks with the sugar until light and lemon colored.

  2. Add the lemon juice and stir in the flour.

  3. Beat the egg whites with the salt until frothy, then add the cream of tartar and beat until light and dry.

  4. Fold the egg whites carefully into the yolk mixture.

Bake

  1. Turn the batter into an unbuttered mold lined with paper.

  2. Bake in a cool oven at 300°F (150°C) for 45 minutes to 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air, giving the cake its light, airy structure as it sets.
Flour
Provides the starch and gluten framework that holds the cake's structure after baking.
Sugar
Sweetens the cake and helps stabilize the beaten yolks for a tender crumb.
Cream of tartar
Stabilizes the egg white foam so it holds its volume during folding and baking.

The step that matters

Folding the egg whites into the yolk mixture. Whites are full of trapped air that gives the cake its rise. Stirring or deflating them removes that air, leaving a dense, flat sponge.
