Roast Quails

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Pick the quails and soak them in a mixture of salt and water until the strong odor dissipates.

  2. Stuff the quails and place two slices of bacon on each breast.

  3. Tie the quails securely with string, binding the bacon and legs and wings down.

  4. Add a little water to the pan and roast in a 350°F (175°C) oven for 40 minutes.

  5. Remove the strings and serve with the bacon on the platter.
