Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Boiled and dried, its starch thickens the milk into a smooth gruel.
Milk
Adds liquid, body and richness to the gruel.

The step that matters

Drying the boiled flour thoroughly. Flour that is still damp will not grate into a fine, dry powder and can clump when mixed with milk. Thorough drying in a cool oven removes the moisture so the grated flour disperses evenly and thickens smoothly.

Swap the potato

How well each one fits the dish's main ingredients (flour, milk, sugar):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
