Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Roll the soda crackers finely and pour the boiling water over them.

  2. Cover with a plate and let it cool.

  3. Once cool, add the beaten eggs, sugar, grated rind of 1 lemon, and juice of 2 lemons.

Assemble and bake

  1. Line a pie plate with pastry, add the mixture, wet the edges, and cover.

  2. Brush the top with milk and bake at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling and give it body as they cook in the oven.
Soda crackers
Soak up the boiling water and thicken the filling into a soft base.
Lemons
Provide the acidity and fragrance that define the pie's flavour.
Coffee sugar
Sweetens the filling and balances the sharpness of the lemon juice.

The step that matters

Let the cracker mixture cool before adding the eggs. If the cracker mixture is still hot when the beaten eggs go in, the eggs can scramble instead of blending smoothly into the filling, leaving a grainy texture.

Swap the lemon

How well each one fits the dish's main ingredients (coffee, sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Lemonthe original
