Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Beat the yolks of five eggs and one egg white well.

  2. Add one cup of milk, ½ cup of melted butter, and ¼ teaspoon of salt.

  3. Mix and sift two cups of sugar and four tablespoons of flour, then add to the mixture.

  4. Stir in six tablespoons of lemon juice.

  5. Beat the remaining four egg whites and fold them into the filling.

Bake

  1. Pour the filling into unbaked pie crusts and bake in a 400°F (200°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling and add richness and colour as they set.
Sugar
Sweetens the filling and helps it set smooth and glossy.
Flour
Thickens the filling so it holds its shape when sliced.
Lemon juice
Adds the sharp acidity that balances the sweetness.
Egg whites
Beaten and folded in to lighten the filling and add airy structure.

The step that matters

Folding in the beaten egg whites. Fold gently so the whipped whites keep their air. Stirring them vigorously deflates the foam, leaving a denser, less light filling after baking.
