Lemon Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Mix the butter and sugar thoroughly.

  3. Beat the eggs separately until very light.

  4. Grate the rind of one lemon and juice two lemons.

  5. Add the lemon juice and rind to the mixture last, along with a little salt.

  6. Pour the mixture into a baking dish and bake for 45 minutes.

  7. Let it cool before serving.
