Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelling agent that sets the mixture into a firm, tender gel as it chills.
- Cream
- Adds richness and fat, and its whipped air gives a lighter, creamier texture.
- Milk
- Adds creaminess and softness, mellowing the coffee's bitterness.
- Strong coffee
- Provides the main coffee flavor and aroma.
- Granulated sugar
- Adds sweetness to balance the bitterness of the coffee.
The step that matters
Stirring in the whipped cream. The mixture must be cool but still liquid, since isinglass sets as it chills. If it is too warm, the whipped cream will deflate and lose its airy texture; if too cold, it will set before the cream is evenly mixed in.
