What each ingredient does

Terrapins
Provide the lean, tender meat that forms the body of the stew.
Butter
Adds richness and fat, carrying flavour and giving the sauce a smooth mouthfeel.
Flour
Thickens the cooking juices into a body-rich sauce when stirred with butter.
Cream
Adds moisture and richness, softening the sauce and mellowing the seasoning.
Madeira wine
Adds sweetness and aromatic depth to the sauce.
Hard-boiled egg yolks
Enrich the sauce with a creamy, thickening texture.

The step that matters

Boil again until tender, adding salt to the water.. Terrapin meat toughens or stays rubbery if undercooked, and boiling in salted water seasons the meat through as it cooks. Checking for tenderness before moving on is what keeps the texture right.
