Ingredients

Directions

  1. Soak the peppers in strong salt and water for 10-12 days.

  2. Remove from brine and soak in clear water for 1 day.

  3. Wipe the peppers dry and place them in cold vinegar.

  4. For milder peppers, remove seeds and scald the vinegar without boiling.

  5. Cut a slit in each pepper and remove all seeds.

  6. Soak in brine strong enough to float an egg for 2 days.

  7. Wash in cold water and place in a stone jar.

  8. Pour over vinegar boiled with cinnamon, mace, and nutmeg.

  9. When ready to serve, stuff each pepper with boiled tongue mixed with mayonnaise.
