Receipt for a Haggis

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Clean the lungs and heart thoroughly.

  2. Boil the cleaned lungs and heart in water until slightly cooked.

  3. Chop the boiled lungs and heart finely.

  4. Mix the chopped ingredients with coarse sea salt.

  5. Stuff the mixture into a casing and tie it securely.

  6. Boil the haggis in water for about 2 hours before serving.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
