Why it works: Barley and potato match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 165 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Plain Beef Soup

Ingredients

Directions

Make the broth

  1. Wash the shank bone and break it in several places.

  2. Place the bone in a pot of cold water without salt and bring to a slow boil.

  3. Skim off the scum as it rises.

  4. After half an hour, add the pearl barley and boil for 2.5 to 3 hours.

Finish and serve

  1. Half an hour before serving, peel and slice the potatoes to ⅛ inch thick and add them to the pot.

  2. Season with salt and pepper to taste.

  3. If the soup is too rich, skim the fat from the top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shank bone
Releases collagen and flavour into the water as it simmers, giving the broth body.
Pearl barley
Thickens the broth slightly as its starch releases during the long simmer.
Potatoes
Add starch and body, softening into the soup while keeping their shape in slices.

The step that matters

Skimming the scum. Scum rising early is coagulated protein and impurities; removing it keeps the broth clear and clean-tasting rather than cloudy or bitter.

Swap the potato

How well each one fits the dish's main ingredients (barley, pepper):

  1. Leekfits better
  2. Capsicumfits better
  3. Carrotfits better
  4. Potatothe original

Fit is the average pairing score against barley, pepper. Candidates are from the same food group and used in at least 100 recipes.
