Escalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Butter your pan or dish.

Layer

  1. Cover the bottom with a layer of finely rolled crackers.

  2. Add a layer of oysters on top of the crackers.

  3. Alternate layers of crackers and oysters until you have 3-4 layers, finishing with crackers on top.

  4. Sprinkle each layer with salt, pepper, and bits of butter.

  5. Moisten the layers with a mixture of oyster liquor and milk.

  6. Top with additional bits of butter.

Bake

  1. Bake for about 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, briny body of the dish.
Crackers
Absorb the liquid and hold the layers together as they bake.
Milk
Moistens the layers so the crackers soften and the dish stays creamy.
Butter
Adds fat and richness, helping the top brown and the flavor develop.

The step that matters

Moistening the layers. The oyster liquor and milk must be spread evenly so the crackers soften throughout. Dry patches stay hard, while over-soaked layers turn soggy and loose.
