Escalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a two-quart pan or dish.

Layer and bake

  1. Layer crackers in the bottom of the pan.

  2. Add a layer of oysters, then bits of butter, salt, and pepper.

  3. Repeat layers of crackers and oysters until the dish is full, finishing with a layer of crackers.

  4. Pour 1 cup of warm water over the layers.

  5. Bake for 45 minutes until the top is a delicate brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and a tender, briny filling between the cracker layers.
Crackers
Soak up liquid and give the dish body so the layers hold together.
Butter
Adds richness and fat, and helps the top brown in the oven.

The step that matters

Baking until the top is just delicate brown. Oysters are delicate and turn firm and rubbery when overheated for too long. Pulling the dish once the top is lightly browned keeps the oysters tender and the crackers moist rather than dry.
