Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the tender, soft body of the slices once cooked through.
Flour
Coats the slices so they brown and develop a crisp, golden surface when fried.
Butter
Conducts heat in the pan and adds fat for browning and a rich flavor.

The step that matters

Salting and soaking the slices. Salt draws out moisture and bitter juices from the eggplant. Drying the slices well afterward matters because surface water would stop the flour from browning and make the frying greasy.

Swap the eggplant

How well each one fits the dish's main ingredients (flour, butter, pepper):

  1. Shallotfits better
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Eggplantthe original
