Escalloped Ham

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a baking dish.

Layer and soak

  1. Layer cracker crumbs in the dish, then add bits of butter, salt, and plenty of pepper.

  2. Add a layer of chopped ham and repeat the layers until the dish is full, finishing with a layer of crumbs.

  3. Pour the milk over the layers and let it stand for at least 1 hour to moisten.

Bake

  1. Bake for about 1 hour until golden and heated through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cracker crumbs
Form the bulk of the dish and soak up the milk to set into a soft, pudding-like texture.
Milk
Moistens the crumbs and, as it heats, sets with them to create a custard-like body.
Ham
Adds savory, salty flavor throughout the layers.
Butter
Adds richness and fat, and helps the top turn golden as it bakes.

The step that matters

Letting the layers stand before baking. Standing gives the dry crumbs time to absorb the milk fully; without it, pockets of dry crumb remain and the dish bakes unevenly.
