What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Baking soda
Neutralises some tomato acidity, keeping the milk from curdling as it is added.
Sweet milk
Adds creaminess and mild sweetness, softening the tomato's sharp edge.
Rolled crackers
Thicken the soup and add body as they soften in the liquid.
Butter
Adds richness and a smooth, rounded mouthfeel.

The step that matters

Adding the baking soda before the milk. Tomatoes are acidic, and when milk meets acid it can curdle. Baking soda neutralises some of that acid, so it should be stirred into the tomato mixture before the milk goes in to keep the soup smooth.

Swap the tomato

How well each one fits the dish's main ingredients (milk, butter, pepper):

  1. Potatofits better
  2. Capsicumfits better
