Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Strip the skin from the rhubarb and cut the stalks into thin slices.

  2. Line a pie plate with pie crust.

  3. Layer the rhubarb in the crust, adding a thick layer of sugar between each layer of rhubarb.

  4. Sprinkle a little grated lemon peel on top.

  5. Cover the pie with another crust.

  6. Bake in a slow oven at 300°F (150°C) for about an hour.
