To Fricassee Oysters

Ingredients

Directions

  1. Wash the oysters thoroughly in their own liquor.

  2. Strain the clean liquor over the oysters.

  3. Heat the oysters on the stove until they are scalded.

  4. Remove the oysters from the liquor.

  5. In a separate pan, thicken some of the liquor with butter and flour kneaded together.

  6. Bring the thickened liquor to a boil and add the oysters, allowing them to boil for a minute or two.

  7. Beat the egg yolks in a bowl.

  8. Take a little of the liquor from the pan and mix it with the egg yolks, stirring gently without boiling.

  9. Combine the egg mixture with the oysters and serve.
