Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare puff pastry and cut it into small squares.

  2. Place a layer of dried oysters on one square of pastry.

  3. Sprinkle a little coarse sea salt, powdered mace, and cayenne pepper over the oysters.

  4. Cover with another square of pastry.

  5. Wet the edges of the pastry with cold water and pinch them together.

  6. Bake in a 400°F (200°C) oven until light golden brown.
