Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide the chopped body and rich flavor that make up the sauce.
Fresh butter
Adds richness and fat, giving the sauce a smooth, savoury mouthfeel.
All-purpose flour
Thickens the butter and liquid into a smooth base for the sauce.
Milk
Adds moisture and mild sweetness, loosening the flour mixture into a sauce.

The step that matters

Melt the butter and mix in the flour. Cooking the flour in melted butter before adding liquid helps it disperse evenly, preventing lumps and a raw starchy taste in the sauce.

Swap the mace

How well each one fits the dish's main ingredients (egg, butter, flour, milk):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against egg, butter, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
