What each ingredient does

Bacon
Is the main food cooked here, and its salt is partly drawn out by soaking.
Bread crumbs
Sprinkled over the cooked bacon, they add a light coating and a little texture.

The step that matters

Bring the water to a gentle boil. A gentle boil cooks the bacon through evenly without toughening the meat. A hard rolling boil can make the outside tough and dry while the centre is still cooking.
