Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tripe
Forms the main body of the dish, becoming tender when stewed and firm when fried.
Butter
Fat for frying the tripe, adding richness and browning the surface.
Onions
Browning and slow cooking bring out sweetness, adding depth of flavor.
Vinegar
Adds acidity that brightens the rich tripe and onions.

The step that matters

Simmer the onions until very tender. Onions cooked gently in liquid soften and release sweetness, while cooking too hard can leave them scorched or tough. Full softening gives the dish a mellow, cohesive texture.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, parsley, vinegar):

  1. Shallotfits better
  2. Capsicumfits better
  3. Carrotfits better
