Mutton and Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place the leg of mutton or lamb in a roasting pan.

  3. Baste the meat thoroughly with the basting liquid.

  4. Season the meat to taste.

  5. Roast for 12 minutes per pound for lamb, or 15 minutes per pound for mutton.
