Game Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Finely mince the remains of game and moisten with a little gravy.

  2. Warm the minced game in a saucepan.

  3. Roll out the light crust or puff paste and cut into small round patties.

  4. Brush the patties with the beaten egg.

Bake and serve

  1. Bake the patties in a preheated oven at 400°F (200°C) until lightly browned, about 20 minutes.

  2. Place a little of the warm mince in the center of each patty and serve hot, piled on a napkin.

What each ingredient does

Remains of game
Provides the savory meat filling that gives the patties their main flavor.
Gravy
Adds moisture so the minced game stays tender and does not dry out.
Light crust or puff paste
Forms the flaky pastry shell that puffs and crisps in the oven.
1 beaten egg
Brushed on the pastry to promote even browning and a glossy finish.
