Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch and moisture, giving the bread its body and a soft, moist crumb.
Yeast
Ferments the sugars and produces gas, which makes the mixture rise.
Sugar
Feeds the yeast during fermentation and adds sweetness.
Hops
Add bitter and aromatic flavour to the liquid.

The step that matters

Cook the grated potatoes in the hop water immediately. Grated potato oxidises and darkens quickly when exposed to air. Putting it straight into hot liquid slows this browning and keeps the mixture pale.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar):

  1. Mustardfits better
  2. Cucumberfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
