Corn Starch Puffs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the egg whites until stiff peaks form.

  3. In another bowl, cream the butter and sugar together.

  4. Add the egg yolks and vanilla to the butter mixture and mix well.

  5. Sift the corn starch and baking powder together, then fold into the butter mixture.

  6. Gently fold in the beaten egg whites until just combined.

Bake

  1. Drop spoonfuls of the mixture onto a greased baking sheet.

  2. Bake for 15-20 minutes or until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites whipped to stiff peaks give the puffs their light, airy lift; yolks add richness and structure.
Butter
Creamed with sugar, it traps air and adds fat for a tender, rich crumb.
Corn starch
Sets during baking to give a light, delicate, tender texture.
Baking powder
Releases gas in the batter to help the puffs rise and lighten.
Sugar
Creams with butter to aerate the batter and adds sweetness and golden browning.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only if they are whipped to stiff peaks and folded in gently. Overmixing deflates the foam, so the puffs bake up dense instead of light.
