Cream Meringue

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Whip the egg whites until stiff peaks form.

  3. Gradually add the powdered sugar and flavoring, mixing until very stiff.

Shape and bake

  1. Heap the mixture in the shape of half an egg on parchment paper in a baking pan, leaving half an inch between each.

  2. Leave the oven door slightly ajar to monitor baking.

  3. Bake until they are a light yellow-brown, then remove and cool quickly.

Fill and serve

  1. Use a thin knife to scoop out the soft inside and fill with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that gives the meringue its structure and airy lift.
Powdered sugar
Stabilizes the whipped foam and adds sweetness, helping the shells hold their shape and brown.
Whipped cream
Fills the cooled shells, adding moisture and richness to the soft interior.

The step that matters

Baking until light yellow-brown. Meringue is dry and crisp when baked low and slow enough to dry out; at high heat it browns too fast and can turn bitter or sticky inside. Watch color closely and cool quickly so it does not soften.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, cream):

  1. Vanillafits better
