Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Grated Ham Sandwicfies

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Grate enough well-cooked ham to serve 3-4 people.

  2. Flavor the ham with a pinch of cayenne and a sprinkle of nutmeg.

  3. Roll out the puff pastry very thin and cut it into two equal portions.

  4. Prick the pastry in a few places to prevent rising, then bake at 400°F (200°C) until golden brown.

  5. Let the baked pastry cool completely, then spread a thin layer of fresh butter over it.

  6. Evenly spread the grated ham over the buttered pastry.

  7. Place the second piece of pastry on top and cut into small sandwiches.
