What each ingredient does

Peaches
The fruit that dries down into the final chewy product as its moisture leaves in the sun.
Sugar
Adds sweetness and forms a sugary coating on the fruit as it dries.

The step that matters

Adding sugar at half-dried. Sugar sifted on too early dissolves into wet fruit and can make it sticky, while sugar added once the surface is partly dry stays on the outside. Turning the peaches often makes them dry evenly and keeps them from sticking to the dishes.
