Baked Potato Rolls

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Boil the potatoes in their jackets until tender.

  2. Peel and mash the potatoes.

  3. Form the mashed potatoes into balls slightly larger than a hen egg.

Coat and bake

  1. Dip each ball in melted butter, then in the beaten egg yolk.

  2. Place the balls on a buttered baking sheet.

  3. Bake in a 400°F (200°C) oven for a few minutes until golden brown.

Serve

  1. Transfer to a platter and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy mashed base that forms the body of each roll.
Butter
Adds richness and helps the outside brown in the oven.
Egg yolk
Gives the coating a glossy surface and helps it turn golden brown when baked.

The step that matters

Baking until golden brown. The rolls are already cooked, so baking is only for browning the outside. Too little heat leaves them pale, while too long can dry the surface. Watch the color rather than the clock.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg):

  1. Asparagusfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, egg. Candidates are from the same food group and used in at least 100 recipes.
