Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe grapes
Provide the main fruit flavour and colour of the ice.
Sugar
Sweetens the ice and lowers its freezing point so it stays softer.
Egg whites
Whisked into the partly frozen mixture to trap air and lighten the texture.
Lemon juice
Adds acidity that brightens the grape flavour.

The step that matters

Add the whisked egg whites when the mixture is about half frozen. At this stage the mixture is slushy, so the whites blend in evenly without sinking. Fully frozen ice cannot be folded, and a liquid mixture will not hold the air that keeps the texture light.

Swap the grape

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Grapethe original

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
