Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Forms the bulk of the preserve and becomes tender and translucent as it cooks in syrup.
Sugar
Sweetens the preserve and, at high concentration, helps preserve the fruit and set the syrup.
Lemon
Adds acidity and brightness to balance the sweetness of the syrup.
Ginger root
Adds aromatic warmth to the syrup.

The step that matters

Boil slowly until clear. Cooking the fruit gently in syrup lets sugar slowly replace the water in the citron, so it turns clear and tender. Boiling too hard can break the pieces apart and make the syrup cloudy.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
