Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Oranges
Provide the main juice, flavour and acidity for the jelly.
Lemon
Adds extra acidity that brightens the sweet orange flavour.
Granulated sugar
Sweetens the jelly and helps give it a smooth, soft texture.

The step that matters

Soaking the gelatin in cold water before adding hot water. Gelatin must hydrate in cold liquid first so the granules dissolve evenly in the hot water. Adding it dry or to hot liquid without soaking can leave lumps, which stop the jelly from setting smoothly.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, sugar, orange):

  1. Vanillafits better
  2. Lemonthe original
  3. Mangofits about as well
  4. Figfits about as well

Fit is the average pairing score against gelatin, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
